Ingredients
- 5oz Chicken Breast
- 30gs Sweet Potato Noodles
- 1 Large Egg
- 1 Garlic Glove
- 1/4 Zucchini
- 1/4 Carrot
- 1/4 cup Soybean Sprouts
- 1 tbsp. Sesame Oil
- 1-2 tsp. Brown Sugar
- 1 tsp. Sesame Seeds
- 1 tsp. Green Onions
- Salt
- Olive Oil
- 1-2 tsp. Soy Sauce *optional*
First bring 4 cups of water to boil and add noodles when boiling (cook per package instructions). Next, julienne the Zucchini and Carrots. In a separate bowl mix egg until combined, cook over medium heat in small pan flipping egg after 2 minutes. Once cooked and cooled cut egg into thin strips and set aside. Mince garlic and place in a hot pan with a spray of olive oil. Once fragrant add chicken until it gains color. If desired add soy sauce while the chicken browns. Add carrots and zucchini when the chicken has some color (about 3-4 minutes) stir-fry for 2 minutes. Add brown sugar and salt* combine then add beansprouts and noodles. Mix until combined. Removed from heat, add sesame oil, eggs and mix. Top with sesame seeds and green onions.
